Week of September 19

-Rigatoni and Meatballs

-(bread for small group)

-White Bean Soup
changes:  no turnips, wine, or spinach, bacon instead of salt pork, added small container of light cream at the end.  Also pureed some of the soup for more creaminess.

-Crusted Chicken and Black Beans
changes:  no chopped tomato, added thawed frozen corn, diced red bell pepper, and 1/4 teaspoon of chili powder along with the cumin.

For dessert:  The Baked Brownie


Week of August 29

-Last minute fish tacos:
Thawed frozen tilapia, marinated in fresh orange juice (we had no limes..) and olive oil, salt, and pepper.  Grilled.
Topping from a can of spiced black beans, mango, cilantro, and corn (avocado would be good, none around, same with the lime again).
In a soft taco shell.

-Fried Rice

-Meatball Subs


-Farfalle with Sausage, Tomatoes, and Cream
Garlic bread with pecorino romano butter

-Chicken Teriyaki Meatballs with Edamame


Week of August 15

-Cavatelli (frozen) and meatballs with homemade sauce
Green bean/carrot mix

-Dijon Fish Cakes with Greens

-Broccoli and Chicken Salad with Lemon Dressing
Homemade sandwich bread


Week of August 7

Busy week, so...

-Slow-Cooked Carnitas Tacos made with much less expensive (and smaller) pork loin roast
Side salad:
1 can black beans
1 cup frozen corn, thawed
1 yellow pepper, diced
2 scallions, sliced thinly
1 jalapeno, diced
handful of cilantro, chopped
Tossed with:
juice of 1 lime
1 tB olive oil

The side salad would be better with avocado, I just didn't have any around.

For small group
-Green Beans with Bacon and Red Bell Pepper

-Barbecued Chicken (actually roasted in the oven, put sauce on at middle and end of roasting)
Baked beans

And for dessert this week, my favorite homemade ice cream so far:
-Chocolate Ice Cream


Week of July 17

-Grilled bone-in chicken breast with pesto and linguine
Tomato bruschetta (store-bought), crackers

-Grilled Chicken with Peach BBQ Sauce
